My niece is discovering her inner homemaker and came up with this recipe. It’s my favorite mac & cheese recipe. I have no idea how many calories are in this, but it’s so good I don’t care.


  • 12 oz. pkg. elbow macaroni
  • 1 red bell pepper, chopped
  • 1 medium onion, chopped
  • 2 Tb. olive oil
  • 16 oz. half & half (approx.)
  • 4 cups cheddar cheese
  • 1 clove of garlic, finely diced
  • ½ cup butter (1 stick)


Cook the macaroni per the package instructions. Meanwhile, sauté the red pepper and onion and garlic in the olive oil. Drain the macaroni and then add the sauté mixture to the cooked macaroni. Combine. Cube the butter. Use 1/3 of the butter to grease the bottom of a 9 1/2 X 11 baking dish. Spoon half of the macaroni into the dish. Spread another 1/3 of the butter over the top of the macaroni. Sprinkle two cups of the cheese over the macaroni. Repeat, layering macaroni, butter and cheese. Pour the half & half into the baking dish until it fills the dish about half way.

Bake at 350 degrees for approximately 30 minutes.
